Moose Enchiladas

  • 1 pound moose hamburger
  • 1 clove garlic
  • 2 cans enchilada sauce
  • 2 cans water
  • salt
  • pepper
  • 1 bunch chopped green onions
  • 1 chopped green pepper
  • 2 large chopped tomatoes
  • 1 small can chopped olives
  • 1 bag grated cheese

Brown hamburger and garilic in a bit of oil. Drain and set aside. Take enchilada sauce and water and simmer in frying pan until thickened. Salt and pepper meat and sauce to taste. Dip flour toritillas into sauce and lay on a flat surface. Mix together onions, peppers, tomoatoes and olives. Fill tortillas with meat, vegetable mix and grated cheese. Roll tortillas and place in a buttered baking dish. Pour remaining sauce over top along with any extra vegetables or cheese. Cover and bake at 350 degrees for 30 minutes.
