Buffalo Bill Hayman’s Grilled Buffalo Steaks

  • 6 large buffalo rib eye steaks
  • 1/2 cup butter
  • 6 sweet onions, peeled and cut in halves
  • 1 teaspoon white pepper
  • 2 tablespoons brown sugar
  • 1 cup pinot noir
  • 1/2 cup wine vinegar
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons cassis
  • 4 sprigs rosemary
  • 2 tablespoons virgin olive oil

In a large saucepan, melt the butter and sauté the onion halves until they are brown and tender. Grill the steaks for about 10 minutes, turning once. While the steaks are grilling, add the remaining ingredients to onions, and simmer on low heat. Serve the steaks with onion sauce.
