Cliff’s Canadian Bear Steak
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon thyme
- 2 large bear steaks
- 1 cup sliced onions
- 5 tablespoons bacon drippings
- 2 cups beef stock
- 1 cup red wine
- 2 tablespoons tomato paste
In a bowl, combine the flour, salt, pepper and thyme. Pound this mixture into all sides of the steaks using a meat hammer. Brown the onions in the bacon drippings, and add the seasoned steaks. Brown the steaks well on all sides. Add 1 cup of the stock and the cup of wine. Bring to a boil on medium heat. Reduce the heat, and simmer for 5 minutes. Turn the steaks, cover the pan and let the steaks simmer on low for 2 hours, adding more stock if necessary. Check the steaks for seasoning, and serve.
