Italian Hunter’s Boar

  • Leg of boar
  • Fat ham for larding
  • Butter
  • 1 sliced onion
  • 1 chopped carrot
  • 1 chopped celery rib
  • 1 chopped parsley sprig
  • Salt and pepper
  • 1 cup stock

Lard a leg of boar with strips of fat ham. Brown in butter with onion, carrot, celery rib, parley sprig, and salt and pepper. When browned, pour on white wine and cook for 2 minutes. Add stock. cover and simmer very gently for 3 hours.
