Venison Sloppy Joes

  • 2 pounds ground venison
  • 1 pound ground pork
  • cooking oil
  • 1 large onion, chopped
  • 1 cup catsup
  • 1 cup tomato or V-8 juice
  • 1 cup shredded cheddar cheese
  • 1 tablespoon chopped parsley (optional)
  • salt and pepper to taste

Heat a little oil in a skillet, then brown the meat and onion. Pour off the excess oil. Add the other ingredients and simmer for an hour. Serve on open buns with french fries and large dill or sweet pickles.

Variation: If you've got fresh wild mushrooms at hand, add a cupful either diced or sliced.
